    Where can I buy a thermometer like you use? (electric one)

  2. The electric one I got at Williams Sonoma. It was good, but it got kind of wonky – I think the probe got immersed in water once. So be careful. I find that the brewing thermometer (glass) works well, and you don’t have to worry about getting it wet! Cheaper too – should be able to get one for $10 or less at a home brew or wine making store.
    Never had amasake – it doesn’t sound too difficult to make (wiki says that street vendors used to sell it). Just have to get your hands on some koji to inoculate. Probably you could find a non-pasteurized commercial amasake at a health food store, and use that as your inoculum. Good luck!
